You couldn’t pick a more appropriate time to talk about chocolate than Valentines Day. And you couldn’t find a better person to talk about it than CALS’ resident candy expert, Rich Hartel, professor in the departments of Food Science and Biological Systems Engineering. On Feb. 14, Hartel will talk about “The Science of Chocolate” at Wednesday Nite at the Lab, a free public science event held each Wednesday at the UW Biotechnology Center.
His talk will focus on how chocolate is made and the fascinating science that goes into turning cocoa beans into the deliciously rich treat. You will also go through a tasting demonstration with numerous chocolate samples to gain an appreciation of different aspects of chocolate science. Wednesday Nite @ the Lab series takes place 78:15 p.m., Room 1360 Biotechnology Center, 425 Henry Mall, UW-Madison Campus.
