Last Wednesday, Oct. 12, the Department of Food Science celebrated their expanding educational partnership with members of Wisconsin’s wine industry at an open house at Wollersheim Winery in Prairie du Sac. The event highlighted the department’s efforts to support the state’s growing industry and featured a 30-minute program followed by a reception and tour of the winery.
A new food science course for undergraduates – FS375: The Science of Wine – was launched last spring as part of the industry partnership. Students in the inaugural course learned about the chemistry and microbiology involved in making wine and participated in the production of a red blend at Wollersheim. The collaborative project – known as Campus Craft Winery – yielded 230 cases of wine, which were sold under the name “Red Fusion.”
