Maya Warren talks ice cream chemistry on Science Friday

imgresFood science graduate student Maya Warren had another celebrity moment last week.

Warren, who was part of the Sweet Scientists team that took first place in the recent season of The Amazing Race, was a guest on NPR’s Science Friday on July 17 in a segment titled “Total meltdown: The rate of ice cream collapse.” In the segment, host Ira Flatow asks Warren to explain how an ice cream sandwich left outside for a day could appear to be whole, unmelted. The answer gets into some pretty serious ice cream chemistry, with Warren discussing fat globules, air bubbles, ice crystals and more. Give it a listen here.
