Sunday’s New York Times Magazine cover story on the food industry and obesity begins with CALS alumnus James Behnke (MS 68, PhD 72). Behnke, a former chair of CALS Board of Visitors and a 2008 recipient of the CALS Honorary Recognition Award, served as chief technical officer at Pillsbury from 1979 until his retirement in 2000. The article opens with his frank recollections of a 1999 meeting of top food company CEOS that Behnke and other industry food science experts had set up. The idea was to discuss the emerging obesity epidemic and how the industry might address it. “It didn’t work,” Behnke is quoted as saying. “These guys weren’t as receptive as we thought they would be.” Read the story here.
