Nienhuis cooks chili rellenos to teach freshmen about the culture of food

Nothing’s bland about horticulture professor Jim Nienhuis, and that extends to his tastes in food and his style when talking about it. Peppers are one of his primary research interests and one of his favorite teaching tools is the chili relleno. Last month he delivered a lecture to a Freshman Interest Group (FIG) about the culture of food as he showed the students how to go about the roasting, peeling, stuffing and frying of this spicy treat.
