Food scientist John Lucey explains “immortal hamburger” phenomenon on CNN

Ever wonder how long a Happy Meal would last sitting on a shelf? Apparently lots of people have, including a photographer who recently decided to document the decline of a McDonald’s burger and fries over the course of six months, posting all of the photos online.

The project became national news when the food refused to mold after months and months of on-shelf aging. You can hear CALS food scientist John Lucey’s explanation for this “immortal hamburger” phenomenon in this CNN news report.

(Spoiler alert: There’s no reason to freak out. It’s just dehydrated food.)
