Sue Nitzke’s new book looks at the science of feeding young children

Susan Nitzke, a professor in Nutritional Sciences, worked with three experts in child development and early childhood education to write a new book: Rethinking Nutrition: Connecting Science and Practice in Early Childhood Settings. Head Start teachers, day care providers, preschool teachers, and anyone who provides care and food for young children will find a wealth of current, research-based information supported by real-life examples, topics for professional development, sample letters to families, and recommended readings/resources.
