To help sweethearts and others prepare for Valentine’s Day, CALS candy guru Rich Hartel will share his chocolate expertise online in two ways this week: via an Ask Me Anything (AMA) interview on Reddit and an interactive webinar hosted by the American Chemical Society.
During the AMA, which runs from 11 a.m. – 12 p.m. CT on Wednesday, Feb. 11, Hartel will answer questions on chocolate chemistry.
During the ACS webinar, which starts at 1 p.m. CT on Thursday, Feb. 12, he will explore the question: What separates good chocolate from the most exquisite chocolate? He will explain how tempering, crystallization, and chemistry can make all the difference when selecting your favorite chocolate treat.
