A group from the UW Meat Lab recently attended the 57th International Congress of Meat Science and Technology (ICoMST) from August 7-12 in Gent, Belgium. The theme for the congress was “Global challenges to production, processing and consumption of meat”. With approximately 500 scientists and industry professionals attending, this is the largest meat science conference worldwide. In addition to attending the conference, the group also visited meat processing plants and meat industry supplier companies in the Netherlands and Belgium prior to the conference.
